You want to select yourself a wine paired with your dish and and you would like to know the rules to do it, not just take the wine indicated with a dish in a data base, then this application is good for you.

It is an approach by the taste that will lead to the wine paired with your dish. You will have to determine the taste that you expect for your dish.

This is made easy with a simple method: in a small list you choose a dish of same kind than yours, this will be a reference of taste for you and you will then describe the taste of your dish from this reference.The reference dishes are very standard well known dishes like a grilled sole with steamed potatoes or a roasted beef with beans or a chocolate mousse for a desert. It is from that choice that, compared to it, you will establish the taste of your own dish by ticking boxes to adjust the gustatory characteristics that are smell, taste strength, sourness, bitterness, sweetness or fattyness. You will have a guide for frequent variants of modifications from this reference. Advices are also given to adjusy each characteristic.

The application then displays up to 3 wines, ranked from the best choice on top. You will also have in another window the information on the reason of this choice and you can navigate from one window to another to see the impact of the gustative characteristics on the choice of wine. This is very instructive and makes the difference with all other applications on the issue.

This approach his based on mathematical statistics on recommendations made by a panel of top chefs and sommeliers from which have been drawn general rules in the form of algorithm. The choice of wines is a result of a statistical calculation from which the selected wines are the ones that have the highest probability to be in good pairing with the dish. This is illustrated with a quality index with stars (3 stars being the best adequate choice, if there is a wine that corresponds).

The proposed wines are issued from the use of these rules of the “sommelier art” and playing with this appli will learn you the rules of this art. This appli is regularly upgraded by enlarging the panel of top chefs and sommeliers.
