We proudly introduce our Head Chef of Ten Japanese Restaurant, Daisuke Miyake. Daisuke was born in Kyoto - The cultural and ancient capital of Japan.

At a young age, Daisuke enjoys cooking his favorite dishes for his family. While dining out, Daisuke enjoys watching chefs cook. One of his favorite television programs is Iron Chef.

Daisuke started his career with a 3 years apprenticeship in the famous "Shimogamo Saryo" restaurant in Kyoto. This was a traditional Japanese restaurant where he mastered the skills of cooking under strict supervision from top Japanese chefs. On completion of his apprenticeship, Daisuke moved to Tokyo Cookery School for Nutrition where he spent 2 years learning about the science and benefits of good food and nutrition. After graduating, he worked for 1 year as a Sous chef at the Nobu inspired "Indigo" restaurant in Tokyo. He then moved on to the Kappo style restaurant "Kanofu" in Tokyo to gain more skills. During this time, he worked as a Sushi and Japanese a la carte chef.

In December 2008, Daisuke was recruited and was a key member of the pre-opening team to help establish Ten Japanese restaurant on the Gold Coast. This included setting up the layout of the restaurants and planning of the menu.

Daisuke hard work and determination has earned him a promotion to Head chef at Ten Japanese restaurant. Daisuke is skilled in various styles of Japanese cooking. However, he still enjoys working at the sushi counter as he is keen to observe and gather feedback from his guests on his culinary skills each night.

"Ten" in Japanese translates to heaven, and Daisuke's passion mirrors that of owner Mr Bob Jones – to work hard to create the best possible dining experience for guests, to give them a "taste of heaven" on the Gold Coast.
